Ingredients
- 1 medium onion, cut into thin wedges
- 1 1/2 lb. beef chuck roast
- 1/4 tea. salt
- 1/4 tea. pepper
- 2 cloves garlic, minced
- 1 16/ oz. can whole cranberry sauce
- 1-2 tea. finely chopped canned chipotle chile peppers in adobo sauce
- 2 cups instant brown rice
- fresh jalapeno chile peppers, halved (optional)

Preparation
Step 1
Place onion in a 4 qt. slow cooker. Add beef roast to cooker. Sprinkle with salt, pepper and garlic. Combine cranberry sauce and chipotle peppers. Pour over all.
Cover and cook on low for 6-8 hours or on high for3-4 hours.
To serve, cook rice according to package directions, except omit salt and butter. Serve beef mixture with rice.
If desired, garnish with jalapenos.
