Croquets

From Eileen. This recipe came to me at Thanksgiving time so I used turkey, but Eileen says you can make them with chicken, ham or beef as well.

Ingredients
- 1 Stick Butter
- 1/2 Cup Flour
- 1/4 tsp. Salt
- 1/8 tsp. Pepper
- 2 Cups Milk
- 3 Cups Turkey (Chicken, Ham or Beef)
- 1 tsp. Chopped Onions
- 1 tsp. Parsley
- Celery Salt to taste (1/2 tsp.) or Dry Mustard if using ham
- Bread Crumbs

Preparation
Step 1
Melt butter, add flour, salt and pepper. Cook on medium heat, stirring constantly until smooth. Add milk and continue stirring until mixture is thick. Add meat, onions, parsley and celery salt. Place in fridge until totally chilled. (or freezer for 20-30 minutes). Form into 8-10 logs and roll in bread crumbs. Refrigerate for at least 3 hours.
Beat egg with water. Run each log through egg wash and then roll in bread crumbs again. Refrigerate for 30 minutes.
Fry in vegetable oil.
