Hoe Cake

My mom use to make this all the time, it's cheap, filling and good. Goes great with a late night breakfast.

Ingredients

  • 1/2

    cup solid shortening

  • 2

    T oil (enough to cover bottom of pan)

  • 2

    cups self rising flour

  • 1

    cup milk

Directions

Heat 2 T oil (or enough to thinly cover the bottom of an 8" iron skillet or cake pan) in bottom of pan in 425 degree oven. Cut shortening into flour until looks like course meal. Pour in milk, stir well. Pour in heated skillet. Bake in 425 degree oven for about 20 minutes or until browned to your liking.
