Banana Bread Muffins
Yum! Banana muffins are a great breakfast treat that can double as a dessert. These have the option of creative stir ins like chopped nuts, candied fruit or chocolate chips.

Ingredients
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup sugar
- 2 eggs
- 4 ripe bananas
- 1/4 cup melted butter
Preparation
Step 1
Preheat oven to 350 f.
Whisk together flour, baking soda, and salt in a medium bowl. In a separate bowl, mash ripe bananas and blend in sugar and eggs. Mix wet and dry ingredients thoroughly and stir in melted butter.
Optionally, stir in 1/2 to 3/4 cups of nuts, chocolate chips, or finely chopped candied fruit.
Line a muffin pan with paper or silicone liners or spray with nonstick spray. Fill cups 3/4 full with batter. Bake 15-20 minutes for full sized muffins or about 12 minutes for mini muffins(double yield in number).
