Green Chile Chicken Soup

Ingredients
- 2 tablespoons extra virgin olive oil
- 1 chopped onion
- 4 cloves garlic
- 80 oz chicken broth
- 10 oz rotel tomatoes
- 7 oz can diced green chiles
- 4 boneless skinless chicken breast, cooked, and shredded (seasoned with salt and pepper)
- 2 1/2 cup cooked rice (basmati)
- 1/4 cup fresh lime juice
- 1 1/2 teas ground cumin
- pinch of coasher salt, garlic salt, cracked black pepper
- 1 bunch fresh cilantro, chopped
- fresh diced avocado for garnish
- 1 cup shredded cheddar cheese for topping
- tortilla chips for topping

Preparation
Step 1
Saute onion and garlic in olive oil for five minute. Stir in chicken broth, tomatoes, green chiles, chicken breast, rice, lime juice, and seasonings. Cook for 5 minutes taste and season according to liking. Right before serve add chopped cilantro. Top to your liking.
