Chocolate Donuts or Waffles (THM-S)

Ingredients
- 2 eggs
- 1 tsp vanilla stevia, or to taste (6-8 droppers full)
- 2 Tbsp flax meal
- 2-4 Tbsp cacao powder, to taste
- 2 Tbsp coconut flour
- 1 tsp baking powder
- pinch of sea salt, to taste
- 2 Tbsp coconut oil, melted (or at least softened)
- 2-4 Tbsp coconut milk, adjust to get right consistency

Preparation
Step 1
Crack eggs into mixing bowl. Whisk well with a fork. Stir in stevia.
Add flax meal, cacao powder, coconut flour, baking powder & salt.
Stir in coconut oil, and coconut milk until right consistency for waffle batter.
Bake in mini-donut maker 3-5 minutes or waffle iron about 4 minutes.
Good topped with coconut butter sweetened with vanilla stevia.
Makes 2-3 waffles or about 1 dozen mini-donuts.
