Ingredients

  • Frosting:
  • 2 eggs
  • 2 cups sugar
  • 1 teas vanilla
  • 2 cups all purpose flour
  • 1/2 teas baking soda
  • 1/2 teas baking powder
  • 1/2 teas salt
  • 1 can (20 oz) crushed pineapple, undrained
  • 1/2 cup chopped walnuts
  • 1 pkg (8 oz) cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1/2 cup flaked coconut

Preparation

Step 1

In large mixing bowl, beat eggs, sugar and vanilla until fluffy. Combine dry ingredients. Add to egg mixture alternately with pineapple. Stir in walnuts. Pour into greased 13 x 9 x 2 baking pan. Bake 350 for 35-40 minutes or until toothpick comes out clean. Cool on wire racks.

In small mixing bowl, beat cream cheese, butter and powdered sugar until smooth. Frost cake. Sprinkle with coconut and store in the refrigerator.
