SALMON ON CEDAR
Wonderful light smoky salmon taste with a yummy lemon and nut topping.

Ingredients
- 1 cedar plank
- 3 tbsp mayonnaise (not salad dressing)
- 2 tbsp finely chopped fresh parsley (or 1-1/2 tsp dried)
- 1/2 tsp minced garlic (optional)
- 2 tsp lemon juice
- 1/2 tsp grated lemon peel
- 1-1/2 lbs. salmon fillets, with skin
- 1 tbsp pine nuts, finely chopped

Preparation
Step 1
Soak cedar plank in water for at least 8 hours or overnight, turning several times to soak both sides or weighting down with heavy object to keep submerged.
Combine first 5 ingredients in small bowl.
Spread mayonnaise mixture evenly on skinless side of fillets. Sprinkle with pine nuts. Remove cedar plank from water. Place on preheated grill, rough side down. Reduce heat to heat. (or use indirect cooking method). Close lid for 1 to 2 minutes until plank is heated through and looks dry in places. Lay salmond, skin side down, on cedar plank. Close lid. Cook for 10 to 12 minutes for 3/4 inch fillets unti fillets flake easily when tested with fork in thickest part. Cooking time will vary with thickness of fillets.
