Ingredients

  • 1 cup flour
  • 1/2 cup whole wheat flour
  • 2 tsps baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 cup carrots - peeled and grated
  • 1/2 cup raisins

Preparation

Step 1

Grease muffin tine. Preheat oven to 400. Combine dry ingredients in large bowl. Beat together egg, milk and il. Pour into dry ingredients. Stir just until ingredients are moist. Fold in raisins and carrots. Fill tins 2/3 full. Bake at 400 for about 20 minutes.

Serve with orange butter.

ORANGE BUTTER
1/2 cup soft butter
1/4 cup sifted icing sugar
1 1/2 tbsps grated orange rind

Cream butter until fluffy. Beat in sugar and orange rind.
