  • 1/2 teaspoon cayenne pepper
  • 16 ounces extra sharp cheddar
  • 1 stick (8 tablespoons) unsalated butter at room temperature
  • pecan halves, if desired

Step 1

Prepare the dough at least a day before you plan to bake the crackers. Sift dry ingredients together into a small bowl or onto a sheet of wax paper. Grate cheese into another bowl.

In a large mixing bowl, cream butter until it is soft and pale yellow. Add cheese and mix well; gradually stir in dry ingredients. The mixture will be stiff.

Shape the dough into two 9 inch long logs about 1 inch in diameter. Wrap them in wax paper, then in aluminum foil and refrigerate overnight (or freeze for several hours). The dough may be refrigerated for up to a week.

Preheat the oven to 375 degrees. Slice the rolls into rounds 1/8 to 1/4 inch thick and place them 1 to 1 1/2 inches apart on an ungreased baking sheet. Top each with a pecan half if desired. Bake until golden, about 12 minutes
