Ingredients

  • 2 ripe med. bananas, cut into 1 inch pieces
  • 1 tbsp. lemon juice
  • 1/2 c. chopped walnuts or pecans
  • 1 3/4 c. all-purpose flour
  • 2/3 c. sugar
  • 1/2 c. butter, cut into 8 pieces
  • 1/3 c. milk
  • 2 eggs
  • 1 tsp. baking soda
  • 1/2 tsp. salt

Preparation

Step 1

Process bananas and lemon juice with steel blade until mashed (about 5 seconds). Add 1/4 cup nuts and remaining ingredients to bananas. Process on/off 10 to 12 times or until flour is just moistened. Do not overprocess.

Pour into greased loaf pan. Sprinkle remaining nuts over batter. Bake at 350 degrees for 55 to 65 minutes, until wooden pick inserted in center comes clean. Cool 15 minutes in pan. Remove from pan and cool on wire rack.
