Ingredients
- 1 pound grated cheddar cheese
- 1/2 pound grated swiss cheese
- 1/2 pound grated monterey jack cheese
- 1/4 cup each: diced green, red and yellow bell peppers
- 1/4 cup chopped scallions (Justin made me leave this out)
- 1/2 tbsp chopped garlic
- 1/2 tbsp Worcestershire sauce
- 1 tbsp chopped dill (also left out)
- 1/6 cup chopped cilantro
- Dash of liquid hot red pepper sauce
- 1/2 tbsp cajun spices
- 1/6 cup dijon mustard
- 1 cup mayonnaise

Step 1
Stir ingredients together until well-blended. Form into several balls and chill. Serve with crackers or tortilla chips. You can freeze leftover cheeseballs.
