Ingredients

  • 1

    pound grated cheddar cheese

  • 1/2

    pound grated swiss cheese

  • 1/2

    pound grated monterey jack cheese

  • 1/4

    cup each: diced green, red and yellow bell peppers

  • 1/4

    cup chopped scallions (Justin made me leave this out)

  • 1/2

    tbsp chopped garlic

  • 1/2

    tbsp Worcestershire sauce

  • 1

    tbsp chopped dill (also left out)

  • 1/6

    cup chopped cilantro

  • Dash of liquid hot red pepper sauce

  • 1/2

    tbsp cajun spices

  • 1/6

    cup dijon mustard

  • 1

    cup mayonnaise

Directions

Stir ingredients together until well-blended. Form into several balls and chill. Serve with crackers or tortilla chips. You can freeze leftover cheeseballs.
