Cinnamon Waffles or Donuts (THM-S) 1 Picture

Ingredients

  • 2 eggs
  • 3/4-1 tsp vanilla stevia or english toffee stevia (4-6 droppers full)
  • 2 Tbsp flax meal
  • 1-2 Tbsp cinnamon, to taste
  • 2-3 Tbsp coconut flour
  • 1 tsp baking powder
  • pinch of sea salt, to taste
  • 2 Tbsp coconut oil, melted (or at least softened)
  • 1/4-1/2 cup coconut milk, adjust to get right consistency

Preparation

Step 1

Crack eggs into mixing bowl. Whisk well with a fork. Stir in stevia.
Add flax meal, cinnamon, coconut flour, baking powder & salt.
Stir in coconut oil, and coconut milk until right consistency for waffle batter.

Bake in waffle iron about 4 minutes or mini-donut maker 4-5 minutes.

Makes 2-3 waffles or about 1 dozen mini-donuts.
