Ingredients
- 1 1/4 C whole-wheat flour
- 1 C barley or spelt flour
- 1 t. baking powder
- 1 t. baking soda
- 1 t. ground cinnamon
- 3 small ripe bananas or 2 large
- 1 jar baby-food prunes, or 1/2 C applesauce
- 1/3 C maple syrup or honey
- Egg replacer for 1 eyy (1 1/2 t. Ener-G egg replacer mixed with 2 T water
- 1/2 C raisins
- 2 t. vanilla extract
- 3/4 C oat, almond or nonfat soy milk
- 1 T lemon juice

Step 1
Preheat oven to 350 degrees. Mix first five ingredients in a large bowl. Mash bananas in a medium bowl. Mix in remaining ingredients. Add liquids to flour and mix gently. Pour into a 9X5 loaf pan and bake for 70 minutes.
