SALMON****Pasta with Smoked Salmon

Great for both. All of the components can be assembled earlier in the day and combined at the last minute while the pasta boils.

Ingredients
- 2 servings
- 3 1/2 ounces spaghetti or penne (or other) pasta
- Salt
- 2 tbsp. pine nuts
- 1 Tbsp olive oil
- 2 tbsp. chopped shallots (can substitute onions)
- 1 clove garlic, minced
- 2 tbsp. dry white wine
- 30 grams mascarpone, at room temp
- 2 tbsp. heavy cream
- 1/2 Tbsp lemon juice
- 1 Tbsp lemon zest (divided)
- 1 Tbsp chopped fresh parsley or dill (I used parsley)
- 2 ounces smoked salmon, cut into bite sized pieces
- Fresh ground black pepper

Preparation
Step 1
* Put the pine nuts in a single layer in a large skillet. Heat on medium heat, stirring occasionally, until fragrant and lightly browned. Remove pine nuts from pan and set aside.
* Cook the pasta in boiled, salted water, according to package directions, until done. Drain, reserving some of the pasta water.
* While the pasta is cooking, prepare the sauce. In a large skillet, heat olive oil on medium heat. Add the shallots and garlic, cook for 2 minutes, then add white wine and lemon juice. Increase the heat and let boil down by half. Add the mascarpone, lemon zest and the cream and let boil a minute more until sauce-like consistency is reached.
* Drain the pasta and return it to the pot. Add back some of the pasta cooking liquid to the pasta to correct the consistency. Add the toasted pine nuts, parsley, and freshly ground black pepper and mix well. Add the smoked salmon and toss lightly, just to mix, then serve.
* Serve sprinkled with a bit of grated parmigiano reggiano, if you like (although that's not traditional - but good)
