Yum Yum Breakfast Rolls (Mini Blini)

I've been making these delicious cream cheese/cinnamon breakfast treats for about 20 years now. Even though my kids are now grown, it's still on the "requested" list. I hope your family enjoys them as well.
NOTE: I keep these in the freezer, and cook a small batch at a time. Warning - they don't last long.

Ingredients
- 2 8-oz. pkgs. cream cheese
- 1/2 C granulated sugar
- 2 egg yolks
- 1 to 2 loaves of thin-sliced sandwich bread (square), crusts cut off
- 1 stick butter, melted
- 1 cup sugar
- 3 T. cinnamon

Step 1
Preheat oven to 350 degrees.
Mix first three ingredients. Roll bread thin with rolling pin. Spread each slice with cream cheese mixture and roll up tightly.
Dip each piece lightly in melted butter, then roll in mixture of sugar and cinnamon.
Place seam side down on a cookie sheet (or sheet pan) and freeze for about 30 minutes. Cut each roll into thirds while frozen. (If making for later, divide the rolls into freezer bags, in one layer so they don't stick together).
Bake 10 minutes
