Ingredients

  • 1 (10oz) pkg frozen chopped spinach, thaw and squessze excess liquid out.
  • 1 1/2 c finely chopped onion (1 large)
  • 3 T unsalted butter
  • 1 t salt
  • 1/2 t black pepper
  • 1/4 t grated nutmeg
  • 1 loaf french bread
  • 6 oz swiss cheese, shredded
  • 2 oz Parmesan cheese, shredded
  • 2 3/4 c milk (for richer flavor mix some heavy cream)
  • 9 large eggs
  • 2 T Dijon mustard
  • 1 # sausage

Preparation

Step 1

Cook sausage and remove from pan.
Saute onions about 5 minutes. Add salt, pepper, nutmeg, and spinach. Set aside.
In 2 layers tear French bread, add sausage, spinach and both cheeses.
Whisk eggs, milk, and mustard and pour over casserole.
Refrigerate overnight.
Let stand at room temperature 30 minutes and then bake at 350* for 45 - 50 minutes. Let stand 5 minutes before serving.
