Step 1
Take one Rib Roast any size (must be room temperature) Rub w/ salt, pepper and/or garlic (fresh, chopped or powder) Place in an open roasting pan, rib side down. Roast 1 hr in a pre-heated oven at 375. Turn off oven and let side in "off" oven for 3-4 hours. DO NOT OPEN DOOR/TAPE DOOR IF NECCESARRY!
30 or 40 mins before dinner, turn on oven again to 375.
Regardless of the size, your roast will be well-browned and rare inside. Internal temp should be 135 for rare. For less rare; add more time to final heating.
Remove and let stand 15-20 mins before carving
