Ingredients
- 2 Tbl. butter
- 1 medium onion, chopped
- 1 cup bell pepper chopped
- 2 cloves garlic, minced
- 1 lb. pkg. smoked sausage, cut into pieces
- 1 cup rice
- 2 cups chicken broth
- 1 (14 oz) can diced tomatoes

Preparation
Step 1
Melt butter in large saucepan. Add onion, pepper, garlic and smoked sausage. Cook for 5 minutes or until tender, stirring often.
Stir in rice, chicken broth, tomatoes. Mix well and bring to a boil.
Reduce heat, cover and simmer 25 minutes. Remove from heat and let set for 5 minutes longer before fluffing with a fork.
