  • 8 pounds corned beef
  • 2 bunches garlic cloves, cut in half
  • 2 large onions, sliced
  • 2 carrots, sliced on bias
  • 2 stalks celery, sliced on bias
  • 2 tablespoons black pepper, whole
  • 2 gallons water

Step 1


In medium saucepan, heat oil until hot. Add bacon and cook until brown. Add all seasonings and red onions. Cook until onions are caramelized. Add cabbage and cook four minutes. Add vinegar, white wine and gin. Cook cabbage until leaves are tender. Season to taste with salt.
