Ingredients

  • 2 tablespoons olive oil
  • 2 red onions, thinly sliced
  • 1/2 cup sugar
  • 1/4 cup red-wine vinegar
  • 1/2 cup dry red wine
  • 3 sprigs fresh thyme, leaves picked
  • Kosher salt and freshly ground black pepper, to taste

Step 1

Using a large saute pan over medium heat, heat the oil. Add onions and cook, stirring occasionally, until they begin to soften and become translucent, about 10 minutes. Add sugar and continue cooking until sugar and onions caramelize, about 10 minutes. Increase heat to medium-high, add the vinegar and wine, and bring to a boil, stirring frequently. Reduce to a simmer, add thyme and cook until liquid has evaporated, about 3 minutes. Season with salt and pepper, to taste. Serve warm or at room temperature. Store cooled jam, refrigerated in an airtight container.

Makes about 2 cups.
