Ingredients
- 1 white cake mix
- 15 oz can cream of coconut
- 2 egg whites
- 1 1/2 cups sugar
- 1/3 cup water
- 2 tsp light corn syrup
- 1 tsp vanilla

Preparation
Step 1
1. Make cake in a cake pan according to package directions. Let cool.
2. Prick cake carefully with a fork all over. Slowly pour the cream of coconut over the top until cake is saturated.
3. To prepare 7 Minute Frosting, add a small amount of water to the bottom of a double boiler and bring to a boil. In the top of the double boiler, combine all ingredients but vanilla, then place over the boiling water. Beat with an electric mixer at high speed while cooking for 7 mins. Remove from heat and add vanilla, then mix until thick enough to spread.
