Giant Gingerbread Boy Cookie or mini cookie molds

Ingredients
- 5 to 5 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cloves
- 1 cup solid vegetable shortening (Crisco)
- 1 cup granulated sugar
- 1 1/4 cups molasses
- 2 eggs, beaten

Step 1
Preheat oven to 325 degrees F (350 for small cookies). Thoroughly mix flour, baking soda, salt and spices. Melt shortening in large saucepan. Cool slightly. Add sugar, molasses and eggs; mix well. Add 4 cups dry ingredients and mix well.
Turn mixture onto lightly floured surface. Knead in remaining dry ingredients by hand. Add a little more flour, if necessary, to make a firm dough. Divide dough into 2 equal parts(recipe makes 2 giant cookies). Spray pan with vegetable pan spray. Press dough portion into prepared Wilton Giant Gingerbread Boy pan. Or press into small cookie pans, filling molds about 2/3 full. Bake 23-25 minutes (10-13 minutes for small cookies). Cool in pan on rack for 5 minutes. Turn pan over to release and cool completely.
Makes 2 giant cookies or 4 dozen small cookies.
