Ingredients

  • 1 pound lean pork tenderloin, cut into 1-inch cubes
  • 1 small tart apple, peeled and chopped
  • 1/2 cup chopped onion
  • 1/4 cup orange juice
  • 1/2 tablespoon curry powder
  • 1 clove garlic, pressed
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1/4 cup raisins
  • 1/4 cup flaked coconut, toasted

Preparation

Step 1

In a slow cooker, combine first 8 ingredients (pork through cinnamon). Cover and cook on LOW for 5 to 6 hours or until meat is fork-tender. Adjust heat setting to HIGH. In a small bowl, combine cornstarch and water until smooth; stir into slow cooker. Cover and cook on HIGH for 30 minutes or until thickened, stirring once. Serve sprinkled evenly with raisins and coconut.

SERVING SUGGESTION: Serve over brown rice and serve steamed broccoli on the side.
GLUTEN FREE: Use arrowroot starch instead of cornstarch.
