Ingredients

  • 2 cups all-purpose flour
  • 2-1/2 tsps baking powder
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 3/4 tsp salt
  • 1/4 tsp baking soda
  • Dash ground allspice
  • 1 egg
  • 3/4 cup packed brown sugar
  • 3/4 cup canned pumpkin
  • 2/3 cup milk
  • 3 Tbsps butter, melted
  • 1 tsp vanilla
  • 1/2 cup miniature semisweet chocolate chips

Step 1

In a large bowl, combine the first seven ingredients. Combine the egg, brown sugar, pumpkin, milk, butter and vanilla; stir into dry ingredients just until moistened. Stir in chocolate chips.

Fill greased or paper-lined muffin cups three-fourths full. Bake at 375 degrees for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
