Ingredients
- 1/2 cup unsalted butter, softened
- 2/3 cup white sugar
- 1 tablespoon and 1 teaspoon honey
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/2 cup shelled pistachios, chopped
- 1 cup dried apricots, chopped into small pieces

Preparation
Step 1
1. Heat oven to 375. Cream butter with sugar and honey
2. Beat in egg, vanilla, and salt
3. Mix in flour, baking soda, and ginger
4. Fold in apricots and pistachios
5. Drop golf-ball sized dough portions onto parchment or silpat lined baking sheet and bake for 11 minutes. enjoy!
