Ingredients

  • 4 Cups (Taylor Farms) Organic Baby Spinach
  • 3/4 Cups Uncooked Orzo
  • 1/4 Tsp Lemon Zest
  • 3 Tbs Fresh Lemon Juice
  • 1 Tbs Extra-Virgin Olive Oil
  • 1/2 Tsp Kosher Salt
  • 1/2 Tsp Minced Garlic
  • 1/4 Tsp Honey
  • 1/8 Tsp Freshly Ground Black Pepper
  • 1 Cup Shredded Skinless, Boneless Rotisserie Chicken Breast
  • 1/2 Cup Diced English Cucumber
  • 1/2 Cup Red Bell Pepper - Chopped
  • 1/3 Cup Thinly Sliced Green Onions
  • 1 Tbs Fresh Dill - Chopped
  • 1/2 Cup (2-oz) Crumbled Goat Cheese

Preparation

Step 1

Cook orzo according to package directions.  Drain and rinse with cold water; drain and place in a large bowl.  Meanwhile, combine lemon zest, lemon juice, olive oil, salt, garlic, and honey; stir well with a whisk.  Drizzle juice mixture over orzo; toss to coat.  Add chicken, dill, pepper, onion, cucumber, and greens; toss gently to combine.  Sprinkle with cheese.  Serve & enjoy!
