Ingredients
- CAKE
- 3 cups grated carrot
- 1 1/4 cups vegetable oil
- 1 3/4 cups sugar
- 2 cups plain flour
- 4 large eggs
- 2 tsp. lemon extract
- 2 tsp. vanilla extract
- 2 tsp. baking powder
- 1/2 cup pecans
- 1/2 cup raisins
- 1 tsp. salt
- 2 tsp. ground cinnamon
- FROSTING
- 4 TBL butter
- 1 box 10X sugar
- 1 tsp. lemon extract
- 12 tsp. vanilla extract
- 8 oz. cream cheese (softened)
- 8 oz. crushed pineapple (drain well)
