Ingredients
- 4 cloves garlic
- 2 cups basil leaves
- 1/4 cup fresh oregano leaves
- 1 canned chipotle in adobo, stemmed and chopped
- 1/4 cup pepitas
- 1 teaspoon ancho chile powder
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons lemon juice
- sea salt and freshly ground pepper

Step 1
Preheat oven to 350°. Prepare a small baking dish or ramekin by spraying it generously with cooking spray. Peel the garlic cloves, place in the ramekin, and toss gently. Roast in the oven for about 25 minutes, or until soft and lightly caramelized. Place roasted garlic and all other ingredients into a blender or food processor,
and purée until smooth.
