  • 20 chicken wings
  • 24 cup hoisin sauce
  • juice of 1 lime
  • 14 cup nam pla (Thai fish sauce)
  • 2 cloves garlic, crushed
  • 1 tablespoon honey
  • 1 tablespoon hot Chinese mustard 0
  • 2 tablespoons chopped cilantro
  • 2 tablespoons mirin (rice wine

Step 1

Using a sharp knife, cut off the tip of each chicken wing. Leave the wings as is, or cut through the joint to make two smaller pieces.

In a bowl, combine remaining ingredients, add chicken wings, and mix. Cover, and marinate in the fridge up to 12 hours.

Preheat the oven to 400°. Remove the chicken wings from their marinade, and place in a baking dish or pan, then roast in the oven for about 30 minutes. Pour the marinade into a small pan, and bring to a boil. Simmer until reduced and thickened enough to coat the back of a spoon. Use this reduced marinade to baste the wings as they cook. Serve hot or cold.
