Ingredients

• 3 Eggs
• 1 Cup Sugar
• 1 Tablespoon Lemon Juice
• 2/3 Cup Pumpkin
• 3/4 Cup Flour
• 1 Teaspoon Ginger
• 2 Teaspoons Cinnamon
• 1/2 Teaspoon Nutmeg
• (Filling)
• 3/4 Stick of Cream Cheese
• 1 Cup Powder Sugar
• 4 Tablespoons Butter
• 1 Teaspoon Vanilla

Preparation

Step 1

Beat eggs for about 4 minutes. Add remainder of ingredients. Preheat oven to 350 Degrees. Heat empty pan for about 4 minutes, Remove and spray with non stick spray. Pour ingredients into pan and cook for about 15 minutes. Lay out towel on flat surface and cover with powdered sugar. Lay out cake on towel and roll up. Set aside to cool.

(Filling)
Mix other ingredients together well. Unroll cake. Spread filling over top. Roll back up. Place on Wax paper. Cover with tin Foil. Freeze.
