Peanut Butter Sandwich Cookies

These cookies are awesome. They are like 2 peanut butter cookies joined by peanut butter fudge! Recipe found in Taste of Homes Church Supper Desserts cookbook.

Ingredients

• Filling:
• 1 cup butter flavored shortening
• 1 cup peanut butter
• 1 cup sugar
• 1 cup packed brown sugar
• 3 eggs
• 1 tsp. vanilla
• 3 cup all purpose flour
• 2 tsp. baking soda
• 1/4 tsp. salt
• 1/2 cup creamy peanut butter
• 3 cups powdered sugar
• 1 tsp. vanilla
• 5-6 tbls. milk

Preparation

Step 1

In a large bowl, cream shortening, peanut butter, and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine flour, baking soda and salt, then add to creamed mixture and mix well. Shape into 1" balls and place 2" apart on ungreased cookie sheet. Flatten in criss-cross with fork. Bake in preheated 375 for 7-8 minutes or until golden brown. Remove to wire racks to cool.

For Filling:
In a large bowl, combine peanut, powdered sugar, vanilla and enough milk to achieve good consistency and spread on cookie. Top with another cookie.
