Ingredients
- 2 1/2 Cups dry Pinto beans
- 3 qt's water
- 1/2 Cup chopped onions
- 1/2 Cup each chopped-Green & Red Bell peppers
- 2 to 4 Tbsp Bacon fat /Olive oil
- salt to taste
- Cheddar cheese -shredded
- 1 Can of Anaheim Chili's chopped or Jalapeno if you want it hot.

Step 1
Put beans in water - soak over night if you have time. Do not drain - put the bean on high heat until they boil then turn to simmer. boil until the beans are soft and the shin starts to split. If you can not soak - do the same but it will take at least 2 to 3 hours to cook them. Strain the beans - save the water.
In a stock pot saute onions & peppers until clear, add bacon fat, and strained beans. with a potato masher - mash in the pan. Add saved water as needed, start with 1/4 cup. When all are mashed and look good - add cheese and any chili's you like and salt to taste, one more mash and enjoy.
