Serrano-Wrapped Grouper with Key Lime Sauce and Sauteed Greens

When the serrano ham bakes in the oven, it becomes deliciously crisp. The lime sauce brings the fish, ham and greens together with a perfect finish.

Ingredients

  • For the sauce:
  • 4 (6-ounce) pieces grouper, 1 inch thick
  • salt and freshly ground pepper
  • 3 tablespoons olive oil, divided
  • 1/4 pound serrano ham, sliced into long, thin strips
  • 1/2 onion, sliced
  • 2 cloves garlic, sliced thinly
  • 1/2 pound baby spinach, washed 3 times
  • 1/4 pound Swiss chard, center rib removed and chopped
  • 1 tablespoon minced shallots
  • 1/4 cup white wine
  • 1/4 cup chicken stock
  • 1 tablespoon Key Lime Butter
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • To serve:
  • 1 lime, sliced in Vs-inch thick rounds, for garnish

Preparation

Step 1

Preheat oven to 400°.
Season the fish, and set aside. In a sauté pan over medium-high heat, warm 1 tablespoon olive oil. Add fillets, and sauté for 2 minutes on each side. Remove from pan, and completely wrap each fillet with the ham. Place the wrapped fillets back into the pan, put the pan on the middle oven rack, and cook 6 to 8 minutes or until done.

Meanwhile, in a sauté pan over mediumhigh heat, warm 1 tablespoon oil. Add the onions and garlic, and cook 2 minutes. Add the greens, and toss, cooking 2 minutes. Season with salt and pepper.

Remove fish from oven, and place on a warns plate.

Make the sauce: In a saute pan over high heat, warm the remaining oil, and add the shallots. Cook for 1 minute. Add wine, and cook 2 minutes. Add stock, and
cook 1 minute. Remove pan from heat, and whisk in the butter and herbs.

To serve: Place the greens in the middle of a warmed dinner plate, and place the fillet in the center of the greens. Spoon sauce over the fillet, and garnish
with lime slices.
