Ingredients
- 2 10-ounces filet mignon or rib eye about 1 1/2" thick
- salt and pepper to taste
- 3 tablespoons butter
- olive oil

Preparation
Step 1
Preheat the oven to 425°
Heat a large, well-seasoned cast iron skillet over high heat until very hot, 5 to 7 minutes.
Sprinkle steaks with salt and pepper on both sides.
Rub olive on to steaks on both sides.
Bring to room temperature.
Place steaks in skillet and sear for 3 minutes on first side until the steak releases easily from the pan.
Turn and sear for 3 minutes on other side.
Place a pat of butter on top of each steak, and place the pan in the oven.
Roast for 10 minutes until desired doneness.
Remove pan from oven, cover with foil, and let rest for 5-10 minutes before serving.
