- 1 1/2 c. graham cracker crumbs
- 4 tbsp. sugar
- 4 tbsp. melted butter
- 2 (8 oz. each) pkgs. cream cheese
- 1/2 c. sugar
- 2 eggs
- 1 tsp. vanilla
- small cupcake papers
In one bowl mix graham cracker crumbs, 4 tablespoons sugar and butter. Set aside. Mix cream cheese, 1/2 cup sugar, eggs and vanilla, beat until creamy.
Put some graham cracker mixture in bottom of paper cupcake tins and fill about 3/4 full with cream cheese mixture.
Bake in a pre-heated 375°F oven for 10-12 minutes. Cool - top with your favorite fruit toppings.
Makes about 48 mini cheesecakes.
