c. graham cracker crumbs
tbsp. melted butter
(8 oz. each) pkgs. cream cheese
small cupcake papers
In one bowl mix graham cracker crumbs, 4 tablespoons sugar and butter. Set aside. Mix cream cheese, 1/2 cup sugar, eggs and vanilla, beat until creamy. Put some graham cracker mixture in bottom of paper cupcake tins and fill about 3/4 full with cream cheese mixture. Bake in a pre-heated 375°F oven for 10-12 minutes. Cool - top with your favorite fruit toppings. Makes about 48 mini cheesecakes.
