Ingredients
- 3 #beef boneless chuck roast
- 1 c bbq sauce
- 1/2 c apricot preserves
- 1/3 c chopped green bell pepper
- 1 T dijon mustard
- 2 t packed brown sugar
- 1 small onion sliced
- 12 kaiser rolls
Preparation
Step 1
Place beef in 4-5qt slow cooker. Mix remaining ingredients except buns; pour over beef. Cover and cook on low heat 7 to 8 hours or until beef is tender.
Remove beef to cutting board, cool, slice and return to sauce. Heat for 20-30 more minutes.
NOTE: If the sauce seems really thin, transfer to a saucepan, reduce and thicken with flour and water paste. Then add all to crockpot.
I have cooked the beef overnight and the remaining steps the next day.
Also, you can substitute grape jelly, orange marmalade or peach preserves
