Root Vegetable Twists

These decorations bring brilliant color to any plate. They're tasty, too! If you don't have all the ingredients, just choose a few colorful veggies to sauté and twist together into a knot. See the picture to the right for a visual guide.

Ingredients
- 1 carrot, peeled
- 1 parsnip, peeled
- 1 leek, trimmed, white part julienned
- 1 turnip, peeled
- 1 beet, peeled
- 1 teaspoon olive oil
- 1 clove garlic, finely minced
- 1 teaspoon white balsamic vinegar
- 1 teaspoon minced mixed fresh herbs
- salt and freshly ground pepper

Preparation
Step 1
Preheat grill to medium. Slice the carrot, parsnip, leek and turnip into thin strips using a peeler. Do the same with the beet, placing the strips into a bowl of cold water to rinse the red juices off. Drain well. Place a saute pan over the direct heat of the grill, and warm the olive oil. Add the garlic. Toss in all the vegetables, and cook 2 minutes. Add the vinegar and herbs, and toss again. Season to taste. Twirl a bit of the veggie mixture into a twist, and garnish the plate.
