Spaghetti with Creamy Lemon Sauce

Ingredients
- 1 lb spaghetti
- 1 C cream
- 3/4 C chicken stock
- 1 T finely grated lemon rind plus some shredded, to garnish
- 2 T finely chopped fresh parsley
- 2 T chopped fresh chives

Preparation
Step 1
Cook the spaghetti in a large pan of rapidly boiling salted water until al dente. Drain and return to the pan.
while the spaghetti is cooking, combine the cream, chicken stock and lemon rind in a pan over medium heat. Bring to the boil, stirring occasionally. Reduce the heat and simmer gently for 10 minutes, or until the sauce is reduced and thickened slightly.
Add the sauce and herbs to the spaghetti and toss to combine. Serve immediately, garnished with finely shredded lemon rind.
