Ingredients
- 1 lb strawberries, rinsed and dried
- 1/2 cup mascarpone cheese
- 1/3 cup heavy whipping cream
- 1 tbsp sugar (more if the strawberries aren't very sweet)
- 1 vanilla bean, scraped
- 1/2 tsp cardamom
- cinnamon, for sprinkling

Preparation
Step 1
Halve each strawberry through the stem-end, and use a melon baller or paring knife to scoop out part of the middle.
In a medium bowl, beat the mascarpone, cream, sugar, vanilla, and cardamom until soft peaks form. Using a piping bag with corner sniped off (or fitted with a round tip), fill each strawberry with the cream. Sprinkle lightly with cinnamon and serve.
