Mint Surprise Brownie Muffins

Ingredients
- 2 cups semisweet chocolate chips
- 1/2 cup + 2 Tbs butter
- 4 large eggs
- 3/4 cup sugar
- 1 tsp vanilla
- 1 cup flour
- 1 cup chopped nuts (I omitted these)
- 1 cup (6 oz) Guittard green mint chips or Petite mint chips

Preheat oven to 350 degrees.
If you want standard size muffins, this recipe yields 1 dozen. If you want mini brownie “bites” - this recipe yields about 48.
Line muffin tins or mini-tart tins with paper liners. Melt semisweet chips and butter in a microwave safe bowl on 30% power until chips are glossy. Stir until smooth. Beat in eggs, sugar, and vanilla. Stir in flour just until smooth. Add nuts at this point, if using them. Fill paper cup liners half full of batter. Drop about 1 Tbs mint chips into each muffin cup (if using standard size muffin tin) - or about 4-5 chips (if using tart pans or mini-muffin tins) *Don’t be tempted to add too many chips, or the bites will ooze green as they bake - not pretty! Press chips into batter with your fingers. Divide remaining batter evenly among cups, completely covering chips. Bake 35-40 minutes (for standard size muffins) - OR - 12-15 minutes for brownie “bites”. Check often and do not overbake. A toothpick inserted in center will still have moist crumbs clinging to it.
Remove from pan and cool on wire rack.
