Ingredients

  • 1/2 cup almond flour
  • 3/4 cup Perfect Fit Protein powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/3 cup organic sugar
  • 2 egg whites
  • 1 whole egg
  • 3 Tbs. melted coconut oil
  • 2 Tbs. almond milk
  • 1 tsp. vanilla extract
  • 2 tsp. peppermint extract

Preparation

Step 1

Preheat oven to 350 degrees. Combine dry ingredients with a whisk.
Add wet ingredients ONE AT A TIME to the dry mix with a whisk.
Lastly add crushed up candy canes! We bought organic candy canes from Whole Foods, but whatever you'd like!
Spray cooking spray on paper liners in cupcake pan. Pour mix in no more than 3/4 full (do not overfill).
Bake for 14-17 minutes or until middle is cooked (use toothpick). Let them cool before you frost them!
