- 1 Loaf Bread broken in chunks (may use leftover bread)
- 4 finely chopped onions (use large
- processor)
- 2 Tbsp butter
- 1/2 cup farina
- 2 Eggs
- 50/50 mixture of butter and shortening for frying

Step 1
Simmer chopped onions in butter. Meanwhile, soak bread in water - squeeze out and put bread in pan with onions and butter. Add farina - mix all ingredients well. When mixture pulls away from pan without sticking, put in a bowl to cool.
Boil a large pot of salted water. When bread mixture is cool, add eggs and mix well. Form into balls (a little smaller than tennis balls) and drop into boiling water a few at a time. Remove with slotted spoon when balls rise to the top of the water. Cool on a plate. These may be made ahead and stored, covered, in refrigerator. When ready to use, slice (about 1/4" thick) and fry in hot butter and shortening mixture until golden brown and crispy . Serve with sauerbraten gravy.
