  • 1/2 cup flour
  • 1/2 cup soy cheddar (or 1/4 cup low fat cheddar)
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. Black pepper

Step 1

Cook pasta or quinoa according to package instructions.
Meanwhile, simmer almond milk over low heat. Gradually add the flour stirring constantly until the mixture has thickened. Mix in cheese and keep stirring until evenly mixed. Add in spices.

Top with silvered almonds or diced tomatoes if desired.
