Ingredients
- 2 eggs beaten
- 1/4 C vegetable oil
- 2 C cooked rice
- 2 C grated cheddar cheese
- 1/2 C chopped parsley (or cilantro)
- 1 medium onion, chopped
- 1 clove garlic (or more)
- 1 C milk
- salt
- pepper

Preparation
Step 1
Cook rice. Combine all ingredients. Bake in greased 8"square baking dish or small casserole for 1 hour @ 325* until knife comes out clean.
Note: 1 C uncooked rice+2 C water= 3 C cooked rice
