Green Chili Enchiladas

Family Favorite Recipe that I found years ago in Once-A-Month Cooking Cookbook. I often adjusted the original recipe to a larger amount.

Ingredients
- Variation:
- 2 1/2 pounds ground beef
- 1 1/2 cup chopped onion
- 1/3 cup Chili Powder
- 1-2 tsp salt, to taste
- 1/2-1 tsp pepper, to taste
- 3 cup shredded cheese (we use cheddar)
- 26 ounce Cream of Chicken Soup (family size can, or use 2 small cans)
- 2 cups sour cream
- 7 ounce can green chili peppers, chopped
- 12-24 tortillas (depending on size of tortillas)
- 1 1/2 cup shredded cheese (cheddar)
- Try making cream sauce using:
- 1/4 cup butter
- 1/4 cup flour
- 2 cups chicken broth
- 1/2 cup milk
- salt, to taste
- then mix in the sour cream & green chilis

Preparation
Step 1
Brown ground beef and onions. Combine with chili powder, salt and pepper.
Combine soup, sour cream & green chilies to make a sauce.
Spoon meat mixture and 3 cups of cheese evenly on tortillas. Roll tortillas and place seam side down in baking dish treated with nonstick spray (or thinly spread some of the sauce in bottom of dish).
Spread sauce over rolled tortillas.
Bake uncovered in a preheated 375 degree oven for 20-25 minutes. The last 10 minutes sprinkle cheese on top.
Use 10x15 baking dish or 2 9x13.
