Caramel Peanut Mini Tarts

Ingredients
- 1 cup all-purpose flour
- 1/2 cup Butter, softened
- 3 oz cream cheese, softened
- 4 (2oz) snickers bars, coarsely chopped
- 2 tbsp whipping cream
- 2 Egg yolks
- 1 tbsp sugar
- 1/2 cup mini semi-sweet chocolate chips
- 1/4 cup whipping cream

Preparation
Step 1
1. Heat oven to 350°F. Combine flour, butter and cream cheese in large bowl; beat at medium speed until dough forms.
2. Shape dough into 24 balls. Press each into bottom and up sides to the top edge of 24 ungreased mini muffin pan cups.
3. Combine candy bars and 2 tbsp whipping cream in medium microwave-safe bowl. Microwave on HIGH 1 min; stir. Continue microwaving, stirring every 15 seconds, until mixture is melted and well mixed (15-30 seconds); set aside.
4. Combine egg yolks and sugar in medium bowl; beat at med speed until pale yellow and thickened. Add to melted candy mixture until well mixed. Spoon about 2 tsp filling into each crust.
5. Bake for 24 mins or until filling is puffed and crust is lightly browned. Run tip of knife around edge of each tart to loosen sides. Cool in pan 10 mins. Carefully lift tarts out of pans to wire cooling rack. Cool completely.
6. Combine chocolate chips and 1/4 cup whipping cream in small microwave-safe bowl. Microwave on HIGH, stirring every 15 seconds, until mixture is melted and completely smooth (45-60 seconds). Spoon about 1 tsp chocolate mixture onto each tart.
