Ingredients

  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 8-oz bag of fresh spinach or 1 large or 2 small bunches, trimmed
  • 2 roasted red peppers, thinly sliced
  • 1 tbsp lemon juice
  • 1/8 tsp salt
  • 1/4 cup goat cheese cumbled

Preparation

Step 1

Heat olive oil in a large frying pan and set over medium-high. When hot, add garlic and stir until fragrant, about 1 min. Add spinach and sliced roasted red peppers. Stir until wilted, about 3 min. Pan will be very full, so you may need to add spinach gradually. Add lemon juice and salt. Stir to mix. Sprinkle crumbled goat cheese over top.
