Creamy Potato Soup

Ingredients

• 1/4 cup diced onion
• 2 tblsp butter
• 2 cups chicken broth
• 1 cup milk
• 1 cup chopped, peeled potato
• 1/2 cup instant potato flakes
• 1 cup shredded Velvetta cheese
• 1/2 cup sour cream
• 1/2 cup shredded cheese for garnish
• 1/4 cup bacon bits for garnish

Preparation

Step 1

Sweat onion in butter in saucepan; be careful to not darken.

Add potato, broth & milk to saucepan; simmer until potato is soft.

Stir in potato flakes; use an electric mixer to blend the soup.

Add Velvetta & sour cream, stir until melted.

Garnish with extra cheese & bacon bits.
